Job Description

1. JOB OBJECTIVE Head Cook will take charge of assisting the Store Manager in maintaining the highest standard of food by ensuring effective Kitchen Management. 2. DUTIES AND RESPONSIBILITIES 1. Ensures that the foods are of high standard and served deliciously hot to the customers within 10 minutes or lesser. 2. Responsible for the maintenance of kitchen equipment and utensils keeping them clean and free from foul odors. 3. Ensures high sanitation, Staff grooming and strict hygiene inside the kitchen. 4. Responsible for the training of Assistant Head Cooks and All Kitchen Crew following established training procedures set by the company. 5. Responsible for product inventory ensuring availability of all products at all times. 6. Making sure that materials forecasts are relatively accurate to avoid run outs or over stacking. 7. Implements proper quality control procedures including conduct of tastes test of products 15 minutes before the store opening. 8. Ensures proper and accurate recording of production, scraps, rejects, spoiled items and transferred in/out. 9. Responsible for the implementation of safety measures in the kitchen. 10. Leads and evaluates performance of the Assistant Head Cooks and All Kitchen Crew. 11. Prepares and submits work schedule of Assistant Head Cooks/Kitchen Crew to the Store Manager for approval. 12. Ensures that the store meet the FSC standards. 3. DIMENSIONS 1. Consequence of Error - Incorrect or Non-implementation of cooking procedures would create dissatisfied customers and high food costs. 2. Kitchen equipment and facilities Responsibility 3. Educational Attainment - Preferably college level or graduate of vocational/technical course related to culinary 2. Experience - Minimum 2 years' experience as Assistant Head Cook for Chinese Cuisine. 3. Human Relations - Ability to coach, train and motivate people - Ability to instruct and discuss technical matters clearly - Able to lead and act as a role model. - With analytical skill - Ability to forecast the materials/ingredients accurately. 4. Mental Effort · Able to understand and follow established Cooking and kitchen procedures · Able to identify problems and arrive at the best solution · Able to create and recommend methodologies relevant to the job 5.
